We took a little break from the camper life to hang out in Puerto Vallarta with friends and family. The week started off with a baby turtle release near our hotel, shortly after we checked into our rooms. What an incredible way to kick off a vacation!

Our hotel is one of many in the area that has a turtle nursery on site, where nests are relocated to a secure, fenced off area that is protected from beach traffic and predators. When babies start to emerge from one of these nests, they are scooped into a large Rubbermaid tote, and released at sunset near the water’s edge. These conservation efforts give them a fighting chance of survival, and is always an awesome thing to see. We were lucky enough to see another release at the end of our trip, too.

Another highlight was having dinner at Ah Caramba. Not only is the view from this restaurant breathtaking, but the food is divine. On this particular night, there was a power outage in the area, but that didn’t slow them down. The kitchen grilled up an awesome feast as usual, and we watched the sunset before dining by candlelight.
We explored the malecon boardwalk, watched the performers, checked out some art in the romantic zone, and stopped often to grab a treat or two along the way. Half of the group moved to their next resort in Nuevo Vallarta, and the rest of us continued to explore on our own.

Speaking of food, we stopped at our favorite food Park, where any picky eater can find something to make them happy.
We also found a Taco festival that happened to be going on while we were in town. There were dozens of vendors, each with their own unique offering, served hot on fresh, handmade tortillas. We even ate grasshopper tacos.

The hotel’s onsite restaurant not only has delicious food, but my favorite salsa picante. This year, the employees shared how to make it, so we could enjoy it at home. The first batch whipped up in the camper turned out great. (garlic, cilantro, roasted serrano pepper, roasted tomatoes, and some roasted onion). Gas stove tops are fabulous for roasting veggies.
This was a great trip for seeing wildlife. From iguanas by the pool, to a crocodile in the marina, to watching hundreds of dolphins swimming by from the palapa, we certainly saw our fair share.
