
This is a variation of a favorite meal that reminds me of home. I hope you like it.
Ingredients:
- 1 each red, yellow, & green bell peppers (or whatever colors you prefer), cut into 1 inch slices
- 1 bundle of asparagus, trim off bottom ends
- 5 thin cut pork chops
- Mrs. Dash – Garlic & Herb
- OPTIONAL: 1 medium yellow onion, cut into thick slices (we don’t eat onions, so I don’t include them, but they were in the original version)
- Olive oil
- 3-5 cloves of garlic – pressed
- Salt & Pepper to taste

Directions:
- Heat a tablespoon of olive oil on medium, add garlic.
- Once pan is warm, add all veggies.
- Cover pan, and let simmer for 8-10 minutes, stirring every few minutes. Cooking time will vary depending on thickness of asparagus.
- When veggies are done, remove from pan (I used a salad bowl.)
- Very generously cover both sides of each pork chop with Mrs. Dash
- Add another tablespoon of oil to the pan, and add chops.
- As soon as they have been turned over, return veggies to the pan.
- Cover and let simmer for a couple minutes.

Ready to eat! Serve it up hot. Add salt and pepper as you want, and enjoy.

We always make too much for just the two of us, and have lots of yummy leftovers. Recently, we found some of those reusable food bags. They are made of food grade silicone, are freezer, microwave, and dishwasher safe. Best of all, they eliminate the need to use so many disposable zip top bags. We are just testing the one so far. We may try to find a version that is easier to open and close, but so far, I really like it.
