Meal Prep: Breakfast!

Planning meals can be a challenge, especially in our tiny home on wheels.  It is easy to want to go out to eat more than we should.  Breakfast is often a scrambled egg or two, but then there are dishes to wash.  Bleh – who wants to spend time on dishes?  We’d rather go explore our latest neighborhood.

A friend recently shared what she does for breakfast, and we tested it out right away.  She makes hard boiled eggs in her Instapot, and the not only peel easy, but they do not have that gross greenish grey layer in the yoke.

We have a tiny 3 qt off-brand Instapot, so there are limitations to how much we can prepare at a time. Nonetheless, here is our breakfast prep:

  • Place a veggie steamer in the pot (a mini rack would work, we have a steamer)
  • Add one cup of cold water, then eggs (our pot only holds 8 at a time, yours may do more)
  • Close lid, ensure it is sealed, and set it for 6 minutes.

Once it is done cooking, and steam vented, we used tongs to place cooked eggs in ice water to cool so you don’t burn fingers while peeling them.

Put the peeled eggs in a ziplock bag with whatever seasonings you like (I used a little creole salt), and in the fridge they go.  One week of breakfast done in less than 10 minutes.

We like to use (& reuse) these bags in our fridge, because they fit better, which is critical when dealing with a small set up like ours.  If you have a real fridge, you may prefer to use a normal size container to store your food.  Do what works best for you and makes you happy.
