Happy New Year!
The holidays are over and it is back to the real world us. This means getting back to normal eating habits and preparing our meals at home.
Now, I don’t know about you, but we often find ourselves too busy to sit down for meals, let alone take the time to prepare them. Unfortunately, this means the temptation to go out to eat is incredibly strong, even though we know that it is neither budget friendly nor healthy. To help us keep our budget in check, and have a better handle of what we are actually putting in our bodies when we eat, we’ve gotten pretty good at creating meals at home that can be enjoyed for multiple days. One of my favorites doesn’t really count as a ‘meal’, but it does keep me on track with our household budget and keeps me going strong enough that I don’t succumb to the temptations offered at the corner coffee shop (those raspberry white chocolate scones are a weakness).
The beauty is in the flexibility and ease in tailoring this to different moods and palates. The ingredients in each batch we’ve made have also changed based on what is in the fridge, sometimes bacon is used instead of sandwich meat, sometimes there are bell peppers to add to the mix, and once there were hash browns. My style of cooking is not very structured. I like to see what happens if I mix a bunch of ingredients I like together. Sometimes it works out great, other times, not so much. I read most recipes as guidelines, and have a lot more fun that way.
This week we went simple: eggs, baby spinach, & sliced turkey. We try to use salt free seasoning options whenever possible, especially when using something already fairly high in sodium, like lunch meat. For this batch, Mrs. Dash’s Caribbean Citrus sounded good. After preheating the oven to 350, grab a muffin tin, and put a slice of turkey in each cup. Add some spinach, then an egg in each cup. Top each cup off with seasoning. Place tin in oven for 12-15 minutes (until eggs are done to your liking).
Now we have a week’s worth of breakfast, and the whole batch cost less than a tall mocha. Very good for the budget and much healthier than most of the options at the coffee shop.
Note: I tend to pull these out when they are a little under done, to keep them from being overcooked when reheated later.
